Dear Berlin Bakery, I have been buying your breads since I discovered them 3 years ago in Whole Foods Market here in Redwood City, CA. My whole family loves them and since we are very health conscious we were extremely pleased with the quality of bread you make. The breads are soft and light and most of all very tasty. We stay away from wheat and really like what you’ve done with the spelt. I buy the white, brown & raisin breads. I have a daughter who will be 4 in a few weeks. We are both August babies making us Leo’s. For some reason we have been wheat intolerant for a while and it was suggested we eat Spelt which we really enjoy, but there is not so many companies that make a quality spelt that is light like yours. In July of 2009 I was diagnosed with breast cancer. My diet had to change and although I was already eating the Berlin Bakery bread, now it was a matter of life or death. I just want to say how grateful I am for your company for making such a wonderful product that myself and my whole can enjoy and do. I am healing solely holistically and my tumor has decreased in size by almost 1⁄2 now. I am getting well and will be here for a lot longer. Found out about your delicious Sourdough Spelt bread from a store manager who recommended it because I love spelt & use Sourdough. (At Whole Foods). I use it because I have food allergies and it agrees with my system. I also find that I can use it for sandwiches & toast. I love it with jam or just plain butter. My mom tried it and likes it too. Last week while grocery shopping, and keeping in mind I wanted to eat healthy foods and natural foods, I found and purchased two loaves of Berlin Natural breads, one being the sour dough spelt bread and the other the sprouted grain bread. In 1996 my son was diagnosed with a life-threatening allergy to all nuts and sesame seeds. Needless to say it was quite a shock to a family who had never been exposed to such an allergy. As time passed, it appeared all products started incorporating nuts into their ingredient lists. As I set out to find bread products not incorporating or manufacturing with nuts/sesame seeds, I found Berlin Natural Bakery products in Whole Foods. I purchased a loaf and came home and called immediately to verify the fact that nuts/sesame seeds were not ingredients or ever used on the production line. Dear Berlin Bakery Friends, You asked: "do you love our products and have a story to share??' YES INDEED. A few years ago I moved from California to East Tennessee, Johnson City to be exact. In CA I had a number of wonderful health food stores in the area where I lived that helped me find products that I could eat and were free of dairy and wheat. When I arrived in Johnson City, I learned of 2 local health food stores, one of which was named the Health Barn and is very close to my condo. The people at the Health Barn listened to my tale of woe and have been wonderful in introducing me to many of the products that they carry. The bread they told me about was from your company. They asked me if I had tried any spelt products, explaining that it was not wheat but was an early relative of wheat and totally different than the wheat of today. I carefully tried your spelt varieties and love them. My two favorites are Sourdough and Righteous Raisin. The Sourdough is firm and is wonderful for sandwiches and even works for an occasional hamburger. The Righteous Raisin is THE BEST!! Since I do not eat any wheat, I do not ever eat doughnuts, or breakfast rolls, or cookies or cakes, or??? Righteous Raisin is my TREAT!! I probably have 20 or more ways that I can prepare it to be the basis for curbing a sweet tooth craving. I LOVE IT!! SO, THANK YOU FOR MAKING QUALITY BREADS THAT HAVE INTEGRITY. I love your spelt bread and have been eating it since approximately 1993. It was given to me as a gift during a multi-million dollar contract negotiation. A team and I were involved in a 6 week contract negotiation in Ohio. After a few weeks, a highly-reserved gentleman from the opposing team noticed that I was passing on the “regular” luncheon foods and asked if I was allergic to wheat. He seemed pleased to learn that I was because apparently his wife was also, which I believe was much more uncommon in the early ’90s than it is today. The next day he brought me a loaf of your spelt bread to try as a gift. I loved it! For the rest of the negotiations, I was appreciative to be able to make sandwiches like everyone else and he was much more cordial. In the end, my team, my corporation and I celebrated a tremendous victory. Not being able to find a distributor in Los Angeles at that time, I had your spelt bread shipped to me by the case. When I moved in 1995 to attend graduate school in Washington, DC, I was pleased to find it in local “health food” stores. Currently, I buy a loaf of your sprouted spelt bread almost every week and, when I can find it, I treat myself to your raisin bread. Over the years I’ve served your bread to friends, unbeknownst to them that it did not contain wheat, and they’ve enjoyed it too. It is a wonderful alternative from the other brands of wheat-free breads, which tend to be heavy, dense and lacking in flavor. Quite the contrary, your bread is light and full of flavor. I found out about Berlin Bakery very recently! I was diagnosed with type-2 diabetes in November of 2009. I began to look for foods that I could eat without having to increase my diabetes medicines. All breads and pastas were off limits at that point, especially processed white breads!One evening about 4 months ago, I had some friends over for dinner. We were making pizza toasats in the oven, and they brought Berlin Bakery Sourdough Spelt for theirs. (Their family eats whole and organicly due to health needs in the family) I was curious about the bread, and tried it. To my surprise, my sugar levels were minimally effected. Since that evening, I have tried other products including the noodles, pastas and cookies. It is a pleasure to once again be able to use my panini press or to make my favorite pasta dish, knowing that the spelt products are better for my health and also help me to better manage my diabetes. A few years ago, I suspected that I had a food allergy to wheat, as well as candidiasis. I also knew I had food allergies to oats, corn, rye, rice, and barley. But I find it almost impossible to go without bread. So, I scoured the bread sections of our two local health food stores with the following criteria in mind: the bread must be made exclusively of spelt wheat, which I had heard is easier to digest than wheat, and it must not contain yeast, wheat gluten, any kind of legume (soy, lentils, etc.), or a sweetener of any kind (honey, molasses, raisins, fruit juices, etc.). There are dozens of brands of bread between these two stores. But only one of them—Mother Earth in Kingston, NY—carried the only loaf that met all my criteria: Berlin Natural Bakery's Old-Fashioned Sourdough Spelt Bread. It consists solely of whole spelt flour, water, and sea salt. I was so relieved to have found it; it supported me in nourishing myself well. But that's not all: it tastes delicious! It's just good. My family and I have been purchasing your bread for two and a half years now—ever since we found out through our naturopath I am severely and genetically allergic to wheat. I was very sad when he told me this… My step-dad also displays wheat intolerance through rashes on his hands and feet. He is an over-the-road truck driver and sandwiches are something easy to hold in his hands while driving, but wheat products are not something that he can tolerate on a daily basis. This has been a problem for him for some 30 years now. So we were thrilled to have found your products at the grocery store where I work as a cashier—Forest Hills Foods in Grand Rapids, Michigan. Mom had previously bulk ordered 50 lbs. of spelt flour from--ahem--the VitaSpelt company. She is a fantastic baker, however for some reason had a terrible time making loaves of bread that did not fall apart when we made sandwiches or put butter & jam on the slices. So mom asked me if the grocery store carried ready-made spelt bread. To our delight, Forest Hills Foods did!! Now dad can have sandwiches on the road and I find happiness in the simple pleasure a snack of peanut butter & honey or French toast with your wonderful Sprouted Spelt Bread can bring. Sometimes I will buy my favorite—the Righteous Raisin Bread to harken back to the days when I was a child to revel in the flavors of toasted cinnamon & sweet raisins with butter on top. I found your whole grain spelt bread at Whole Foods, in Columbus, Oh. It's my favorite bread and I love bread! Those who live or have visited Minneapolis, Minnesota, know that driving on winding Excelsior Blvd., is like driving into a beautiful postcard. On a rare sunny day while lake is at one side and the trees on the other side, it cannot be more beautiful. It is indeed true ìbeauty is on the eyes of the beholderî. I couldn’t see any of those beautiful sceneries while driving toward Whole Food Market. My mind was occupied with my mother’s health issues, which happened un-expectedly. She had two issues, on top of all, one was her tooth and the other one was digestion issues, which became worst during her sickness. If she could eat cereal with milk would be wonderful. Unfortunately she is one of those who cannot digest milk and is sensitive to diary products. She was so weak and so sensitive to almost everything, that feeding her was a real challenge. As the main care giver, I was able to control many of the food items, but not the bread. Together with other family members we tried to find a bread that simply she can eat. It is hard to remember, but we all tried what ever we could find: French, Italian, Viena, English, variety of ìcountryî breads. You name it. The elasticity of these breads made them hard to chew. Even when they were toasted. The other solution was to toast the bread and then put them in food processor. The food processor could not make the bread into powder like pieces, as I wanted. It needed lots of time to process them. The problem was going on, until one day as I was looking, and reading the ingredients on the package of one of the bread loafs, in Whole Food Market, I found the Berlin Natural Bakery Bread. I liked the ingredients. There, I found no chemicals, or any extra ingredients. I thought I would google later about ìspeltî. That was what I did not understand. I bought and went home . Next day I toasted two slices for my mother’s breakfast. I found out they have a different texture. That was my first discovery. I found out that the bread is not elastic. For someone who has problem with her tooth, and has difficulty to chew, this means a lot. Later I asked my mother, how she feels after breakfast. She said: ì I am fine, and have no stomach problemî. That was what I wanted to hear for a long, long time. I called the brothers and let them know: ìthe bread problem is solvedî. It is hard to believe, and to understand, that something so simple as to go to a grocery store and buy a loaf of bread, was a challenge and so painful for me and my family. That was the reality for us and we were trying to do something about it. To be responsible for a loved one and having your own life and responsibilities, to look around for products is the last thing you want to do. Who has such a time in this busy life? So not only my mom was relieved, I was relieved too. Because I was the main care giver and sister and brothers were the help. Well, now that the major part of the problem was solved, there came another one. To go every week to Whole Food, was not easy. Was harder when the spot for the bread was empty. Then I had to order, then had to wait and call to see if the order is ready. So I thought there should be a better way. On 21st century things shouldn’t be so time consuming. Everything is possible. I just looked on the package to find a phone number or an address on the package. I did find one. Actually the easiest and the best. Yes, the web site address. I sat behind the computer and entered into their web site. So easy, simple and yet user’s friendly. I ordered immediately on line. It has been now about two years that every month I order a box of 6 packages. I am not a scientist or a dietitian. I am a 24 hour loving observer. From what I observed this bread helped my mother to have a good breakfast every day. She also takes one toasted slice with apple sauce as her snack. She not only loves the taste, she doesn’t have the digestion problem which she experienced with other type of breads. It sounds funny, between us, the family members, we made a new brand name and that is: ìMom’s Breadî, we all know what we mean. Greenlife Grocery, Chattanooga, Tennessee, was our first stop after experiencing tasteless Spelt Bread at a local commissary. We were excited to find Sourdough Spelt in your product line as we are lovers of Sourdough. My husband had Psoriasis so bad on his hands he had to use a Drummel tool to relieve the skin build up. But his cracked and bleeding fingers and weeping in other areas, were his real agony. We discovered on Psoriasis.com, a book called ‘Spot Free in Thirty Days’, that Gluten was one of his main problems. I found your products through the recommendation of my nutritionist. I have an O blood type, so I'm trying to take dairy and wheat out of my diet. Your spelt is the yummiest bread I have ever tasted. I am a ballet dancer who has stopped eating wheat and spelt has opened a new door for me. It does not affect my weight the same as wheat at all so now, I can be comforted by hot buttered spelt toast and tea!

I love your fresh bread. I ordered it from the Supplement Station in Salem, Ohio. I was wondering if you could answer a question. Is it whole grain bread? Maybe that's a silly question, but I wasn't sure. I don't know if sprouts are whole grains. I have been trying to modify my diet to include more whole grains. While we were in N. Carolina visiting family, we picked up a loaf of your sprouted Biblical Bread. We are from Montana and a search of local stores carrying your products showed none did. I am writing you to say thank you for the great spelt products that you have created. Having celiac disease is a very tough thing to deal with. For several years I was frustrated with all the various rice and potato breads that are nothing like real bread. So I actually stopped eating any type of bread in my meals. Once I came across your bread in a health store my world has changed. I started ordering your bread with caution not knowing how the spelt bread was going to effect my celiac condition. I learned about spelt and spelt flour products when I began the Blood Type Diet in June 2001.( http://www.dadamo.com) I stopped eating wheat in it's many forms and I felt better. My symptoms of inflammation, joint pain, rosecea and fatigue were disappearing. My mother baked our family bread and I learned cooking and baking as I grew up. My brother and I created summer jobs in our teens by baking and selling homemade breads to neighbors and friends. I enjoy breads made with whole grains and sprouted grains, but some things just seem to be better with white bread! My favorite Berlin Natural Bakery product is Classic White Spelt Bread. It's texture is firm and even, it makes wonderful french toast ( with soymilk ) I love that it doesn't contain additives and preservatives because I am very sensiive. I am 22 years old and have really always been aware of what i put into my body, as my parents instilled the importance of nutrition in me at a young age. Since I'm really in-tune with my body, I had been noticing since I was about 18 that wheat played a huge factor in weight gain for me, and really made me feel sluggish. So I would try not to eat it, even though I really loved it. Then about two years ago, I started eating for my blood type, B+, and was introduced to spelt, which I had never heard of. I learned that even though it is "wheat", it has a different gluten structure that wheat or buckwheat, and won't cause weight gain for me. I began picking up spelt products at my local wegmans and whole foods market. I tried several brands of spelt bread, and berlin bakery was by far my favorite. The other brands are dry and flaky and hard to make a sandwhich out of. yours has a wonderful texture and flavor! it's really satisfying!

My favorite ways to eat your spelt bread are either lightly toasting it and making a tuna and arugula sandwhich drizzled with lemon olive oil , or toasting a slice with raw almond butter and honey for a snack. everytime I am eating spelt when friends are over, or even out and about at work and such, it always sparks conversation, because most people have never heard of it. The Puglianos have had a five year love affair with Berlin Natural Bakery! After 18 months of chronic, debilitating health problems, my son was diagnosed with a severe wheat allergy that swelled his brain, as well as allergies to chemical additives and preservatives. My first thought on hearing the doc's news was thank goodness, food is the culprit, we can fix this. My next thought..WE'RE ITALIAN! No more pasta, breads or cannoli. What about pizza??? Ever the optimist, I headed to the supermarket determined to solve our dilema. Four hours later, I returned home empty handed and frustrated. Trips to the health food store turned up really high priced sawdust. Although I fancy myself a pretty good chef, my attempts at baking were so bad it provided us comic relief. Determined to keep my son on his strict diet, we struck a deal that we dubbed the "Four Muskateers." If he couldn't eat it, neither would we. Which meant now there were four very unhappy Italians living under one roof...not-a-good- thing! Until one day a friend introduced us to Berlin's goodies. With the first bite, the Puglianos heard the Hallelujia Chorus! Since then we've enjoyed cookies and that utterly yummy pumpkin spice bread! I have been using your bread now for a few years. I discovered it at a local HFS. Wow! It's wonderful. I seem to have weight gain and some kind of intolerance to wheat. I feel really good using your spelt products. No sore stomach or bloating like when I eat wheat.

The thing I love most about your bakery is the taste! I have tried several of your products and the taste is superior to other companies using spelt. It a wonderful lightly nutty taste. It's hard to say what my favorite product is. They are all so good! I do buy your whole grain spelt bread the most consistently though. These products have affected not just me but also my family. I have allergies to wheat and to many of the foods most companies use as wheat alternatives in breads (potatoes, soy, rye, barley, etc). I had found spelt products, but never really liked them much. I am also terrible cook, so what I tried to make didn't turn out well at all, but I kept at it as had no alternative. Then I found Berlin Bakery online while searching. The white spelt baked goods are so wonderful! I can have a regular sandwich! when I travel or go to a cook-out or anything, I take some bread slices with me so I can have a sandwich or "bun" wherever I eat. The pizza crust is absolutely divine, I brag on it all the time. I've not been able to buy many, and have to ration out the bread (I keep it in freezer) as my money doesn't go far and no one near me sells it, so I only buy when traveling to city where a store sells it. A few years ago I started having really bad headaches when I ate wheat. I have tried for years to narrow down the problem but always had to consider the cost if I wanted bread. Like other stories I have seen my journey into the world without wheat began with the "Eat Right for Your Blood Type" diet. I started the diet in order to lose weight. I had been ill since I was a baby and was put on a bread rice and cereal diet when I was very young so I didn't learn to like many foods (except those I would later find to be the culprits of my issues). I was 17 and was trying all kinds of substitutions for bread, pasta, and all the baked goods that were a staple of my day to day life. I happened across Berlin Bakery White spelt bread one day at my HFS. I had not had bread in a while that didn't taste like cardboard. I tried it and I was in HEAVEN! Over the years I tried many of the different kinds of bread and cookies. I loved the crackers but sadly they don't seem to be available anymore. When I finally discovered that there was a website and I could order from BNB directly, again I was overjoyed. I became a dedicated BNB customer and supporter when the FDA changed the labeling rules and classified spelt as wheat. I emailed many companies to make sure that I could still eat their products. Most did not email me back. BNB not only emailed me back very quickly but also offered reassurance and support that there were many people out there like me that could not tolerate real wheat and that they (BNB) WOULD NOT ever put wheat into their products! That was all I needed to hear. I now buy my bread, flour, pizza crust, simply sauce and many other products all from BNB on a regular basis. They have made my life much easier. Several years ago I received the news from my allergist that I have eight different food allergies: wheat, flax, shrimp, cod, apples, cantelope, bananas, and avocado. With my diet being extremely limited, I began to search for alternative foods, especially for wheat (which seems to be in everything!). I found Berlin Natural Bakery products at our local health food store and was thrilled. I'm a lousy baker, so making my own (edible) bread is out of the question. My body tells me what it likes and what it doesn't in no uncertain terms. While on a strict cleansing diet several years ago, I discovered Berlin's sourdough spelt bread. Dear BNB: I discovered your bread at WholeFoods on Church St. and Chicago Avenue in Evanston, while looking - in desperation - for something with wholesome ingredients and substance that I could serve to my family without feeling guilty and that everyone would eat. These days it's not hard to find high-fiber bread without corn syrup or artificial ingredients, but it looks, feels and tastes synthetic. Then, on a lower shelf, I spotted your Righteous Raisin bread. I was happy to see it contained only whole grain spelt, raisins, honey, cinnamon, yeast and salt, healthy amounts of protein, fiber and iron, and looked homemade. There wasn't time to find out how it tasted, however, as that first loaf disappeared within hours of arriving home. So, I'm on my way back for another and can't think of a better testimonial! I may not have Celiac Disease, but I have multiple food allergies. I know how tough it was to actually find bread, rolls, etc....that we actually fit for human consumption. I was only able to have rice rolls, which were not the best thing. Along came Berlin Natural Bakery and I tried it, and it was like heaven!!! The pizza crust is devine!!!! I am a mother to four kids under the age of 6, one suffers severally from many food allergies. Amongst the entirely to long list are wheat and eggs making it impossible to find bread. We did finally find rice bread that he was able to eat; however, the rest of us disliked it greatly! This meant we would be several different types of bread to make everyone in the family happy. I originally found your products many years ago at a local health food store. What I originally loved about your bread was the few choice ingredients and the lightness. So many natural breads are heavy. It was perfect for sandwiches and grilled cheese and toast. Years later I began purchasing it at Whole Foods in Wheaton IL. Then a few years ago for a time it was not available there so I changed my purchasing habits. Hi, The following is my story regarding your products. About a month ago, I noticed that when I ate certain foods, my nose would run (not to mention indigestion at times). One of the foods that would cause my nose to run was wheat; a common allergen. So, I proceeded to eliminate wheat, as well as dairy, corn and peanuts. Not long after that, one of our daughters, Laura, who just graduated from college with a B.S. in Biochemistry, and is headed to SCNM--a naturopathic medical school in Tempe AZ--started reading "Eat Right 4 Your (blood) Type". This book was on the suggested reading list for school. In this book, it outlines which foods are beneficial, neutral or detrimental for certain blood types. Beneficial foods act as a medicine of sorts, neutral acts as food, and detrimental/"avoid" foods act as "poison". I am O positive. O blood types cannot tolerate most grains. Spelt, however, is considered neutral. I bought your brand sprouted spelt bread (sprouted is preferable for my blood type), as well as, ahem, Rudi's. Rudi's, as it turns out, contains many more ingredients--including oats--which are to be avoided, and actually disagreed with me. Your bread has simple, straightforward ingredients, and causes me no problems whatsoever. Plus, it's the closest thing to home-baked bread that have ever bought! I love the texture, too. I also buy the whole grain spelt hot dog and hamburger buns (the hamburger buns could be a little larger, though, but they work okay.). Our family has converted to primarily spelt products, as we are a mix of A and O blood types. A's can tolerate wheat somewhat better, but Spelt is a neutral option for that blood type as well (sprouted is a better choice for them, too). Since eliminating foods that were problematic, I dropped five pounds without even trying (which was a bonus, since I was not trying to lose weight), and I am not always running for a Kleenex while I'm eating! We found the 800# and order info for BNB products inside the first loaf of bread we purchased 6 yrs. ago at HFS, and we have been ordering our bread & other fine products ever since. That in itself is a blessing to have fresh bread on my doorstep in 2 days. We thank the Lord for our daily bread from BNB that not only tastes good, but is also healthy for us---easy to digest and allergy free. Our all time favorite is BNB's Biblical bread that is so moist and nutritious. For a really special treat we love the pumpkin streusel bread toasted and topped with real whipped cream or mocha almond frozen soy dessert. I use the spelt flour to make wholesome cookies and the white spelt noodles are delicious in chicken, turkey, or vegetable homemade soup. For a homemade pizza to die for, BNB has scored another homerun with their pizza crust---substance without that heavy feeling. All of the employees are wonderful and very accommodating. If ever something is not right, they will make it right.I enjoy sharing samples of this bread with friends, because I also want them to be able to enjoy the convenience of ordering healthy bread. I don't normally do this, but I think it is important for you to know the value your products have added to my life. I was born with serious allergies to wheat, corn, oats, rye, barley and millet. I ate these things long enough as a child to know what real baked goods taste like. I had to stop eating them by my teen years. My mother (who was also allergic to wheat) tried making breads, birthday cakes, sweet rolls, etc. from rice flour, potato starch, bean flour and anything else she could think of to try. They were pretty awful. We could buy a rice bread but it was hard and tasteless. I had pretty much given up the idea of ever having baked goods again. Worse yet, our son is allergic to wheat too and I knew he would face the same diminished quality of life. Then I went to the Hillsdale Natural Grocery and the owner asked me to try spelt. She gave me a small piece of the BNB white bread. It tasted like real bread! I hadn't had real bread in over 30 years. What a joy! We are not allergic to spelt for some reason and your products have returned to us everyday blessings that other people take for granted. We can take a sandwich to work for lunch, have toast with jam in the morning, have french toast, have pizza, breadsticks with a special meal, hamburgerson a bun with all the fixings, and so on. It is a joy you can't imagine unless you have been through something like it. Your insistance that your products be all spelt rather than a mix of spelt and wheat or some other grain is especially important to us because our lives literally depend on the purity of your products. I wish my mom had lived long enough to use your products. She would have loved them too. About nine years ago I was diagnosed with a health condition that led me on a quest to find better healthier food free of the harmful garbage and fillers often put in our food. Someone mentioned to me that the Amish do not use wheat and they use Spelt. I did a lot of research on Spelt, along the way I found your company. I decided to try your products and see how it worked for me. Wow. Over the years not only have I seen my health condition blossom, I have noticed wonderful differences in my skin tone and hair. I certainly do not look my age. In my house the only products my family uses are those containing spelt. We are truly a wheat free house. My children although often having access to wheat prefer spelt. The favorite in our house is the white bread and especially the egg noodles. We have bought your products from our local health food store and direct. I actually have to admit liking to ordering our food direct because the staff is so pleasant to speak with. I have been Gluten free for about 15 years. I hated the Rice bread I was buying as it tasted flat, and without salt. I am not sure which store I first bought your Spouted Spelt bread, but I was delighted to see that it did not bother my digestive track. I thought being in Berlin Ohio it was probably grown without lots of poison sprays like Wheat Rye and Oats are. Now days since I live in Cleveland 6 months of the year and Port Charlotte FL in the winter where I still found your bread and rolls at Reids Health food store. I considered asking if I could order the bread on line, but never tried. Here in Cleveland, I go to Natures Bin to get your products. My grand daughter when she was sixteen decided to go gluten free and she said she felt wonderful. She also does not use milk products. All three of my daughters and two of my granddaughters are gluten free and doing well. I love your products and I do tell others about using them.
