This small loaf of white spelt bread is made with a poolish - a technique that helps produce a uniquely flavored and moist loaf of bread. One look at a single slice of this bread and you will immediately understand what we're talking about!
Its slices are dense - with an incredible flavor and unmistakable texture. It's this texture that allows it to toast thoroughly and evenly.
Don't be surprised if you see a few holes in this bread. It is very common when using a poolish and we feel it just simply adds to its uniqueness!
